Ground Turkey Vegetable Pasta

Ground Turkey Vegetable Pasta
Ground turkey pasta

This ground Turkey and vegetable pasta recipe is loaded with peppers, onions, tomatoes and lean ground turkey. It’s super easy to prepare and doesn’t leave you feeling grossly stuffed afterward.

My mother always called it “goulash” and I ate this dish at least once a week growing up. If you really have a pasta craving, or just love eating pasta like me, this is a much healthier way to enjoy those carbohydrate loaded little beauties.

Tools I use to Make the Ground Turkey Vegetable Pasta

  • Ninja Food Chopper Express Chop I’ve had this little Ninja food chopper for close to 4 years now, and use it almost every day. Weather you want to chop, mince or puree, it does it all. It’s super inexpensive and small enough to hide in a cabinet. I use it to make almost every recipe on my blog including my Easy to Peel Deviled Eggs. I can’t recommend it enough!

What makes this Pasta dish Healthy-ish?

  • Fresh tomatoes instead of jar sauce I used to be heavier and unhealthier. One of the things I learned on my weight loss journey is that small changes make a big difference. So instead of scarfing down a bowl of pasta with sodium loaded jar sauce, I always try and use fresh tomatoes. You don’t always have to spend a day making a marinara sauce. Cooking down some tomatoes with some garlic and basil tastes beautiful. It’s much quicker than making you’re own sauce. In addition, it’s much healthier than sauce out of the jar.
  • Veggies and lean ground turkey Peppers, onions and tomatoes all have an almost negligible amount of calories. Alternatively, a 1LB box of pasta shells like I’ve used in this recipe contains 200 calories per 2oz serving and 8 servings per box. Would a 1LB box of pasta serve 8 people in your home? Yeah, not mine either. I think it’s safe to say we’re definitely eating more than the recommended serving size. Instead of eating multiple servings of pasta, simply add a bunch of veggies and ground turkey and enjoy a much less guilt inducing dish.
